Dutch Oven Beef Stew

Ingredients:

  • 2 pounds stew beef, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (for thickening)
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat your oven to 325°F (165°C).
  2. In your Dutch oven, heat the vegetable oil over medium-high heat.
  3. Add the stew beef pieces to the Dutch oven and brown them on all sides. Remove the beef from the Dutch oven and set it aside.
  4. In the same Dutch oven, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
  5. Stir in the tomato paste and cook for a minute to develop the flavors.
  6. If using, pour in the red wine and let it simmer for a couple of minutes to reduce slightly.
  7. Add the browned beef back into the Dutch oven. Add the chopped carrots, diced potatoes, chopped celery, frozen peas, dried thyme, dried rosemary, bay leaves, salt, and pepper. Stir to combine everything.
  8. Pour in the beef broth, making sure the ingredients are mostly covered. If needed, add a bit more broth or water.
  9. Cover the Dutch oven with its lid and place it in the preheated oven.
  10. Let the beef stew cook in the oven for about 2 to 2.5 hours, or until the beef is tender and the flavors have melded.
  11. In the last 30 minutes of cooking, you can thicken the stew by mixing the flour with a little water to make a paste, then stirring it into the stew. This will help create a thicker consistency.
  12. Once the stew is done, carefully remove the Dutch oven from the oven.
  13. Taste and adjust the seasoning if necessary. Remove the bay leaves.
  14. Ladle the Dutch oven beef stew into bowls and garnish with chopped fresh parsley.
